Stage 6 - Greek Salad
As you transition into Stage 6 of the post-surgery meal plan (3 to 6 months after surgery) and you are able to tolerate more foods, try out this recipe!
- 4 ounces low-fat feta cheese crumbled
- 4 ounces olives or sun-dried tomatoes, packed in oil cut into strips
- 1 cup cucumbers peeled and diced
- 2 tablespoons fresh basil chopped
- 3 to 4 cloves garlic minced
- 2 tablespoons balsamic vinegar
- 1 15-ounce can low-sodium garbanzo beans drained and rinsed
Combine all ingredients in a small serving dish. Toss gently to mix.
