Stage 6 - Greek Salad

As you transition into Stage 6 of the post-surgery meal plan (3 to 6 months after surgery) and you are able to tolerate more foods, try out this recipe!

Servings 4 servings (1 serving = ½ cup Greek salad)

Ingredients

  

  • 4 ounces low-fat feta cheese crumbled
  • 4 ounces olives or sun-dried tomatoes, packed in oil cut into strips
  • 1 cup cucumbers peeled and diced
  • 2 tablespoons fresh basil chopped
  • 3 to 4 cloves garlic minced
  • 2 tablespoons balsamic vinegar
  • 1 15-ounce can low-sodium garbanzo beans drained and rinsed

Instructions

 

  • Combine all ingredients in a small serving dish. Toss gently to mix.
